Curd is a traditional household staple in India made by curdling milk with natural acidic agents like lemon juice, vinegar, or a small portion of existing curd. The lactic acid bacteria present cause milk proteins (casein) to coagulate, creating a soft, soothing product.

Yogurt is produced through standardized industrial fermentation using specific live bacterial cultures—primarily Lactobacillus bulgaricus and Streptococcus thermophilus. The milk is pasteurized, inoculated under precise temperature control (40°C–45°C), and set to achieve a consistent, smooth texture and specific acidity level.
